  • 1 cup buttermilk
  • ½ cup vegetable oil

  • 1 cup chopped pecans
  • 1 cup shredded coconut
  • 2 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease two round 9-inch cake pans.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In another bowl, mix sugar and vegetable oil until smooth. Add eggs one at a time, then buttermilk and vanilla.
  4. Gradually fold dry ingredients into wet mixture until just combined. Gently stir in pecans and coconut.
  5. Divide batter between pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. For frosting, beat cream cheese until fluffy, then gradually add powdered sugar until smooth.
  7. Assemble the cake by layering with frosting in between and on top.
