Ingredients

  • 2 salmon fillets (6 oz each)
  • 2 tbsp honey
  • 1 tbsp sriracha sauce (adjust to taste)
  • 1 tsp olive oil
  • 1 cup cooked rice or quinoa
  • ½ cup diced bell peppers
  • ½ cup sliced cucumbers
  • ½ cup shredded carrots
  • 2 tbsp chopped cilantro or green onions

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat salmon fillets dry and place on the prepared baking sheet.
  3. In a bowl, mix honey and sriracha until smooth. Brush generously over salmon.
  4. Bake for 15-20 minutes until salmon flakes easily with a fork.
  5. While baking, prepare rice/quinoa and arrange fresh vegetables in serving bowls.
