- 2 tbsp sriracha sauce
- 3 tbsp honey
- 2 garlic cloves (minced)
- Juice of 1 lime
- 1 tbsp vegetable oil
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
- 2 cups cooked rice or quinoa
- 1 tsp sesame oil
- 2 tbsp low-sodium soy sauce
- 2 green onions (chopped)
Instructions
- In a bowl, whisk together sriracha, honey, minced garlic, lime juice, and soy sauce until well-blended.
- Marinate salmon in half the mixture for at least 20 minutes.
- Heat vegetable oil in a skillet over medium-high heat. Cook marinated salmon skin-side down until golden brown (4-5 minutes).
- Flip salmon and drizzle remaining marinade over it. Cook until opaque throughout (another 4 minutes).
- In another pan, sauté mixed vegetables in sesame oil until tender yet vibrant (3-4 minutes).
