  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 12 small corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro (for garnish)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 2 tbsp olive oil (for brushing)
  • 1/2 cup sour cream
  • 1/2 cup salsa verde

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and diced chicken breasts. Season with salt, chili powder, and cumin; cook until golden brown (about 15 minutes).
  3. Remove from heat, cool slightly, and shred the chicken using two forks.
  4. Warm tortillas in another skillet until soft but not crispy to prevent tearing.
  5. Assemble by placing shredded chicken and a sprinkle of cheese on each tortilla; roll tightly and place seam-side down on a greased baking sheet.
  6. Brush each taquito lightly with olive oil and bake for 20-25 minutes until crispy and golden brown.
  7. Serve hot with sour cream and salsa verde on the side for dipping.
