  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs, at room temperature
  • 1/2 cup heavy whipping cream
  • 1/2 tsp mint extract
  • Green food coloring (a few drops)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until sandy. Press firmly into mini cupcake liners in a muffin tin.
  3. Bake crusts for 8-10 minutes until golden. Let cool.
  4. Beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time, mixing well.
  5. Fold in heavy whipping cream and mint extract. Add food coloring until desired hue is achieved.
  6. Fill cupcake liners with cheesecake mixture nearly to the top and smooth out the surface.
  7. Bake for 15-20 minutes until centers are set but slightly jiggly. Cool completely before refrigerating for at least 4 hours or overnight.
