  • 4 boneless, skinless chicken breasts
  • 2 medium zucchini (spiralized into noodles)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 3 cloves garlic (minced)
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1 cup halved cherry tomatoes

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade. Add chicken breasts and coat well; let sit while preparing other ingredients.
  2. Heat a skillet over medium heat. Cook marinated chicken for 6-7 minutes per side until golden brown and cooked through. Remove from heat and let rest before slicing.
  3. In the same skillet, add more olive oil if needed and sauté spiralized zucchini noodles for 2-3 minutes until they soften slightly.
  4. Add halved cherry tomatoes and crumbled feta cheese to the skillet; stir gently for another minute until heated through.
  5. Slice the cooked chicken and place it over the zucchini mixture. Drizzle with any remaining marinade from the bowl and serve warm.
