- 3–4 lb chuck roast
- 3 large yellow onions, sliced
- 4 cups low-sodium beef broth
- 5 garlic cloves, minced
- 2 tsp dried thyme (or 1 tbsp fresh thyme)
- 2 bay leaves
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp Worcestershire sauce
- 1 tbsp balsamic vinegar
Instructions
- Preheat oven to 325°F (160°C). Heat olive oil in a Dutch oven over medium-high heat.
- Season the chuck roast with salt and pepper, then sear in hot oil until browned (about 3-4 minutes per side). Remove from pot.
- In the same pot, add sliced onions and minced garlic; cook until golden brown (around 10 minutes).
- Return the roast to the pot. Pour in beef broth, Worcestershire sauce, balsamic vinegar, thyme, and bay leaves. Bring to a simmer.
- Cover and transfer to the oven; bake for approximately 3 hours, until fork-tender.
- Let rest for 15 minutes before slicing.
