- 4 large Russet potatoes (about 2 lbs), peeled and diced
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 cup shredded sharp cheddar cheese
- 2 large eggs
- 1 cup breadcrumbs (plain or seasoned)
- 1/2 cup milk
- Salt, pepper, and paprika to taste
Instructions
- Preheat oven to 375°F (190°C) and prepare a 9×13-inch baking dish with nonstick spray.
- In a skillet over medium heat, sauté onions in olive oil until translucent; add minced garlic and cook until fragrant.
- In a bowl, combine ground beef, sautéed onions and garlic, breadcrumbs, eggs, salt, pepper, and paprika. Form into small meatballs.
- Boil diced potatoes in salted water until tender (about 15 minutes). Drain and set aside.
- Layer half of the cooked potatoes in the prepared baking dish. Place meatballs on top and layer remaining potatoes.
- Mix milk with shredded cheddar cheese; pour over the casserole and sprinkle additional cheese on top.
- Cover with foil and bake for 30 minutes; remove foil during the last 10 minutes to brown the cheese.
