  • 1 lb lean ground beef
  • 4 large Russet potatoes (about 2 lbs), peeled and diced
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup shredded sharp cheddar cheese
  • 2 large eggs
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/2 cup milk
  • Salt, pepper, and paprika to taste

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a 9×13-inch baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté onions in olive oil until translucent; add minced garlic and cook until fragrant.
  3. In a bowl, combine ground beef, sautéed onions and garlic, breadcrumbs, eggs, salt, pepper, and paprika. Form into small meatballs.
  4. Boil diced potatoes in salted water until tender (about 15 minutes). Drain and set aside.
  5. Layer half of the cooked potatoes in the prepared baking dish. Place meatballs on top and layer remaining potatoes.
  6. Mix milk with shredded cheddar cheese; pour over the casserole and sprinkle additional cheese on top.
  7. Cover with foil and bake for 30 minutes; remove foil during the last 10 minutes to brown the cheese.
