  • 8 oz Lo Mein noodles
  • 1 cup bell peppers, sliced (red and yellow)
  • 1 cup shredded carrots
  • 4 green onions, sliced thinly
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 2 tsp sesame oil
  • 3 cloves garlic, minced
  • 2 tbsp rice vinegar
  • 1 tbsp sugar or honey

Instructions

  1. Cook the Lo Mein noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet or wok over medium-high heat, heat the sesame oil. Add sliced bell peppers, shredded carrots, and minced garlic; sauté until tender-crisp.
  3. In a bowl, whisk together soy sauce, rice vinegar, sugar or honey, and Sriracha sauce.
  4. Add cooked noodles to the skillet with veggies; pour the sauce over everything and toss for 2-3 minutes until heated through.
  5. Remove from heat and garnish with sliced green onions before serving.
