Ingredients
- 8 oz Lo Mein noodles
- 1 cup bell peppers, sliced (red and yellow)
- 1 cup shredded carrots
- 4 green onions, sliced thinly
- 3 tbsp low-sodium soy sauce
- 2 tbsp Sriracha sauce (adjust to taste)
- 2 tsp sesame oil
- 3 cloves garlic, minced
- 2 tbsp rice vinegar
- 1 tbsp sugar or honey
Instructions
- Cook the Lo Mein noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet or wok over medium-high heat, heat the sesame oil. Add sliced bell peppers, shredded carrots, and minced garlic; sauté until tender-crisp.
- In a bowl, whisk together soy sauce, rice vinegar, sugar or honey, and Sriracha sauce.
- Add cooked noodles to the skillet with veggies; pour the sauce over everything and toss for 2-3 minutes until heated through.
