  • 2 medium yellow onions, finely chopped
  • 4 garlic cloves, minced
  • 3 ripe tomatoes, chopped
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tbsp chili powder (adjust to taste)
  • 2 tbsp vegetable oil or ghee
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Prep your ingredients: Peel and dice potatoes; chop onions; mince garlic.
  2. Sauté onions in a large pan with oil over medium heat for 8–10 minutes until golden brown.
  3. Add minced garlic, turmeric, cumin seeds, and chili powder; stir until fragrant (1–2 minutes).
  4. Incorporate diced tomatoes and potatoes; stir well and cook for 5 minutes.
  5. Pour in enough water to cover the potatoes (about 1–2 cups). Bring to a simmer, cover, and cook for 20–25 minutes until tender.
  6. Check seasoning; garnish with fresh cilantro before serving.
