Ingredients

  • 3 lbs beef short ribs
  • 2 cups low-sodium beef broth
  • 2 medium yellow onions, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 2 tbsp brown sugar
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & pepper to taste

Instructions

  1. Pat short ribs dry with paper towels for proper caramelization.
  2. Heat oil in a skillet over medium-high heat and sear each side of the ribs until golden brown (about 3-4 minutes per side).
  3. Remove ribs and sauté diced onions in the same skillet until translucent (about 5 minutes).
  4. Stir in minced garlic and tomato paste; cook until fragrant (1-2 minutes).
  5. Transfer short ribs back to the crockpot along with the onion mixture.
  6. Pour in beef broth, red wine, brown sugar, thyme, rosemary, salt, and pepper.
  7. Cover and cook on low for 8 hours or high for 4 hours until tender.
