Instructions
- Pat short ribs dry with paper towels for proper caramelization.
- Heat oil in a skillet over medium-high heat and sear each side of the ribs until golden brown (about 3-4 minutes per side).
- Remove ribs and sauté diced onions in the same skillet until translucent (about 5 minutes).
- Stir in minced garlic and tomato paste; cook until fragrant (1-2 minutes).
- Transfer short ribs back to the crockpot along with the onion mixture.
- Pour in beef broth, red wine, brown sugar, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours until tender.
