- 4 cloves fresh garlic, minced
- 2 tbsp Cajun seasoning
- 1 cup heavy cream
- 8 oz fettuccine or penne pasta (uncooked)
- 1 cup freshly grated Parmesan cheese
- 1 cup bell peppers, chopped (mixed colors)
- 1 medium onion, diced
- 2 cups low-sodium chicken broth
- 2 green onions, sliced (for garnish)
Instructions
- Chop chicken into bite-sized pieces and dice bell peppers and onion.
- In a skillet over medium heat, sauté garlic and onion until soft (about 3 minutes).
- Add the chicken and Cajun seasoning; cook until chicken is slightly browned.
- Transfer mixture to a crock pot; stir in heavy cream, chicken broth, bell peppers, and pasta.
