- 3–4 boneless skinless chicken breasts (about 1 lb)
- 1 cup panko breadcrumbs
- ½ cup ranch dressing
- 2 cups fresh lettuce (romaine or iceberg)
- 1 cup ripe tomatoes (diced)
- 4 large flour tortillas
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper.
- Beat an egg in one bowl; in another, mix panko breadcrumbs with spices. Dip chicken in egg, then coat with breadcrumbs.
- Heat olive oil in a skillet over medium-high heat. Fry chicken for about 5-6 minutes per side until golden brown.
- Transfer chicken to a baking sheet lined with parchment paper and bake for an additional 10-15 minutes until fully cooked and crispy.
- While chicken bakes, chop lettuce and tomatoes. Lay out tortillas, drizzle ranch dressing on each, and layer with lettuce and tomatoes.
- Slice the cooked chicken into strips and add them on top of the veggies before rolling each tortilla tightly.
