  • 8 oz (226g) full-fat cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 1/3 cup (80ml) freshly squeezed lemon juice
  • 1 tsp vanilla extract
  • 1 cup (240ml) heavy whipping cream
  • 1/2 cup (113g) unsalted butter, melted
  • 1 1/2 cups (150g) graham cracker crumbs
  • 1 cup (150g) fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased baking dish.
  3. Bake the crust for 8-10 minutes until golden brown; let cool.
  4. In another bowl, beat cream cheese and sugar until smooth. Add lemon juice and vanilla extract; mix well.
  5. Gently fold in heavy whipping cream until combined.
  6. Spread the filling over the cooled crust evenly.
  7. Refrigerate for at least four hours or overnight to set.
