Ingredients

  • 1 cup fresh corn kernels (or 1 cup frozen corn, thawed)
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 large eggs
  • 4 green onions, chopped
  • 1 avocado, sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 2 tbsp olive oil (for frying)

Instructions

  1. In a bowl, combine corn, flour, baking powder, eggs, green onions, salt, pepper, and cayenne. Mix until just combined.
  2. Preheat a non-stick skillet over medium heat with olive oil.
  3. Scoop about 1/4 cup of batter into the skillet for each fritter. Cook until golden brown (about 3-4 minutes per side).
  4. Toast bread while fritters cool slightly. Layer slices of avocado on toast followed by two fritters.
  5. Fry or poach eggs to your liking and place one atop each sandwich. Add extra toppings as desired.
