  • 3 ripe bananas (mashed)
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsalted butter (melted)
  • 1 large egg (beaten)
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Optional: ½ cup chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas until mostly smooth.
  3. In another bowl, whisk together the flour, baking soda, and cinnamon.
  4. Combine the mashed bananas with melted butter, sugar, beaten egg, and vanilla, then mix well.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Pour half of the batter into the loaf pan, sprinkle cinnamon sugar on top (2 tbsp sugar mixed with 1 tsp cinnamon), then add the remaining batter. Swirl gently with a knife.
  7. Bake for about 60 minutes or until golden brown and a toothpick comes out clean.
