Instructions

- In a mixing bowl, mash the ripe bananas until mostly smooth.
- In another bowl, whisk together the flour, baking soda, and cinnamon.
- Combine the mashed bananas with melted butter, sugar, beaten egg, and vanilla, then mix well.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Pour half of the batter into the loaf pan, sprinkle cinnamon sugar on top (2 tbsp sugar mixed with 1 tsp cinnamon), then add the remaining batter. Swirl gently with a knife.
