- 1 tsp baking powder
- 3 large eggs
- Zest of 1 orange or lemon
- 1/2 cup unsalted butter (softened)
Instructions
- Soak mixed dried fruits in brandy for at least an hour.
- Preheat oven to 300°F (150°C) and grease a cake pan.
- In a bowl, cream softened butter and brown sugar until fluffy. Add eggs one at a time, mixing well.
- Sift in flour, baking powder, and spices; fold in soaked fruits and nuts gently.
- Pour batter into the prepared pan and bake for 1 hour 30 minutes or until a skewer comes out clean.
- Cool for 10 minutes before transferring to a wire rack and optionally drizzling with warmed brandy.
