- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 4 cups cauliflower rice (fresh or frozen)
- 2 cups shredded cheese (1 cup cheddar, 1 cup mozzarella)
- 2 cups fresh spinach
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup low-sodium chicken broth
- 1 tsp paprika
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, warm olive oil. Add seasoned chicken breasts and cook until golden brown.
- Stir in cauliflower rice and spinach; cook for about 5 minutes.
- In a bowl, combine shredded cheese with garlic powder, onion powder, paprika, salt, and pepper.
- Mix the sautéed chicken with half of the cheese mixture and chicken broth in a large bowl.
- Transfer to a greased baking dish, top with remaining cheese, cover with foil, and bake for 25 minutes.
