  • 3 cloves fresh garlic, minced
  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 4 cups low-sodium chicken broth
  • 1 cup tortilla chips, crushed (plus more for serving)
  • 1/2 cup fresh cilantro, chopped (or parsley)
  • Juice of 1 lime
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping vegetables and mincing garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onion and garlic until translucent.
  3. Add the chicken breasts, seasoning with salt and pepper; cook until lightly browned on both sides.
  4. Stir in the bell peppers and canned tomatoes along with their juices; add chicken broth.
  5. Sprinkle cumin and chili powder into the pot; bring to a boil before reducing heat to low.
  6. Cover and simmer for about 20–30 minutes until chicken is cooked through.
  7. Remove the chicken, shred it using two forks, and return it to the pot. Serve hot topped with tortilla chips, cilantro, lime juice, or desired toppings.
