  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cream cheese, softened
  • 1 cup fresh spinach, chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil
  • 1/4 cup pine nuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay the flank steak flat on a cutting board and pound it to about half an inch thick.
  3. In a bowl, mix the mozzarella, cream cheese, spinach, garlic powder, salt, and pepper until combined.
  4. Spread the cheese mixture over one side of the steak and roll tightly; secure with twine or toothpicks.
  5. Heat olive oil in an oven-safe skillet over medium-high heat and sear the steak for 3-4 minutes per side.
  6. Transfer the skillet to the oven and bake for 25-30 minutes until the internal temperature reaches 145°F (63°C).
