Ingredients

  • 2 lbs russet potatoes, peeled and chopped
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup cooked bacon, crumbled
  • 2 green onions, chopped
  • 4 tbsp unsalted butter
  • Salt & pepper to taste

Instructions

  1. Boil the chopped potatoes in salted water until fork-tender (15-20 minutes). Drain well.
  2. Mash the potatoes in the pot. Add heavy cream, butter, half the cheddar cheese, salt, and pepper; mix until creamy.
  3. Layer half of the mashed potatoes in a greased baking dish. Sprinkle with half of the remaining cheese and bacon. Repeat with the rest of the mashed potatoes.
  4. Top with remaining cheese and bake at 350°F (175°C) for 20-25 minutes or until golden brown.
