  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs (room temperature)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Steam cauliflower florets until tender, about 5-7 minutes. Let cool.
  3. Pulse cooled cauliflower in a food processor until a rice-like texture forms.
  4. In a large bowl, combine processed cauliflower, mozzarella, Parmesan, eggs, garlic powder, Italian seasoning, salt, and pepper until mixed well.
  5. Spread mixture on a parchment-lined baking sheet into a rectangle about ½ inch thick.
  6. Bake for 25-30 minutes until golden brown.
