Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent (about 5 minutes).
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in cubed potatoes and broth; bring to a gentle boil, then reduce heat to simmer until potatoes are tender (15-20 minutes).
- Season with Cajun seasoning and salt & pepper to taste; simmer for another 5 minutes.
- Gradually stir in heavy cream and heat through on low without boiling.
