Ingredients

  • 4 cups Yukon Gold potatoes, cubed
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning (adjust to taste)
  • 1 cup heavy cream
  • 4 cups low-sodium chicken or vegetable broth
  • 2 green onions, sliced for garnish
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent (about 5 minutes).
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in cubed potatoes and broth; bring to a gentle boil, then reduce heat to simmer until potatoes are tender (15-20 minutes).
  4. Season with Cajun seasoning and salt & pepper to taste; simmer for another 5 minutes.
  5. Gradually stir in heavy cream and heat through on low without boiling.
  6. Serve hot, garnished with sliced green onions.
