  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons Cajun seasoning
  • 8 oz fettuccine or penne pasta
  • 1 cup bell peppers (mixed red and green)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil

Instructions

  1. Chop bell peppers into strips and mince garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with Cajun seasoning and cook until golden brown on both sides, about 6-7 minutes per side. Remove from skillet.
  3. In the same skillet, add bell peppers and garlic; sauté until fragrant and tender, about 5 minutes.
  4. Pour in chicken broth and heavy cream; stir well while scraping up brown bits from the pan. Let simmer for 3-4 minutes until slightly thickened.
  5. Slice cooked chicken into strips, add back to skillet along with cooked pasta, then toss to coat in sauce.
  6. Sprinkle Parmesan cheese on top and let it melt slightly before serving.
