- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tablespoons Cajun seasoning
- 8 oz fettuccine or penne pasta
- 1 cup bell peppers (mixed red and green)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 3 cloves garlic (minced)
- 2 tablespoons olive oil
Instructions
- Chop bell peppers into strips and mince garlic.
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with Cajun seasoning and cook until golden brown on both sides, about 6-7 minutes per side. Remove from skillet.
- In the same skillet, add bell peppers and garlic; sauté until fragrant and tender, about 5 minutes.
- Pour in chicken broth and heavy cream; stir well while scraping up brown bits from the pan. Let simmer for 3-4 minutes until slightly thickened.
- Slice cooked chicken into strips, add back to skillet along with cooked pasta, then toss to coat in sauce.
