Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup buffalo sauce
  • 1 cup sliced bell peppers (mixed colors)
  • 1 medium onion (sliced)
  • 1 cup provolone cheese (shredded)
  • 4 hoagie rolls
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown, about 6-7 minutes per side.
  2. Remove chicken from the pan, add onions and bell peppers, and sauté until soft, about 5 minutes.
  3. While veggies cook, shred the chicken using two forks.
  4. Return shredded chicken to the skillet with veggies. Pour in buffalo sauce and stir until well combined.
  5. Preheat oven broiler. Divide chicken mixture among hoagie rolls and top with provolone cheese. Broil until cheese is melted and bubbly.
