  • 1 lb lean ground beef
  • 1 can (28 oz) San Marzano tomatoes
  • 1 medium onion, finely chopped
  • 1 medium carrot, diced
  • 1 celery stalk, chopped
  • 2 cloves garlic, minced
  • 1/2 cup red wine
  • 2 tbsp extra virgin olive oil
  • 12 oz spaghetti (or pasta of choice)
  • 1 bay leaf
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, heat olive oil. Add onions, carrots, and celery; cook until softened (about 5 minutes).
  2. Stir in minced garlic and cook until fragrant. Add ground beef; cook until browned.
  3. Deglaze the pan with red wine, scraping up browned bits. Add canned tomatoes and stir to combine.
  4. Toss in bay leaf, oregano, salt, and pepper. Simmer uncovered for 30-40 minutes until thickened.
  5. Cook pasta according to package instructions in salted water until al dente.
  6. Drain pasta and mix it into the bolognese sauce. Serve hot with grated Parmesan if desired.
