  • 4 medium Granny Smith or Honeycrisp apples
  • 1/2 cup packed brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup chopped walnuts or pecans
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Ice cream (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Core the apples, making sure not to cut through the bottom.
  2. In a bowl, combine brown sugar, cinnamon, nutmeg, nuts, and a pinch of salt; mix well.
  3. Stuff each cored apple generously with the filling mixture.
  4. Place stuffed apples upright in a baking dish and top each with a small pat of butter. Pour half an inch of water into the dish.
  5. Bake for 25-30 minutes until fork-tender but still holding shape.
  6. Allow cooling slightly before serving warm with optional vanilla ice cream.
