  • 1 medium onion, finely chopped
  • 10 corn tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Optional: sour cream and fresh cilantro for garnish

Instructions

  1. In a large skillet over medium heat, sauté chopped onions until translucent. Add ground beef, seasoning with salt, pepper, cumin, and chili powder. Cook until browned and crumbly.
  2. Warm corn tortillas slightly in a skillet or microwave to prevent cracking.
  3. Spoon the beef mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  4. Pour enchilada sauce evenly over the rolled tortillas and sprinkle with shredded cheese.
  5. Preheat oven to 350°F (175°C) and bake uncovered for about 25 minutes until cheese is bubbly and golden brown.
  6. Let cool slightly before serving; garnish with fresh cilantro and serve with sour cream.
