  • 1 lb boneless chicken thighs
  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup BBQ sauce (your favorite brand)
  • 1 cup whole milk
  • 4 tbsp butter
  • 1 cup breadcrumbs
  • Salt, pepper, garlic powder, onion powder (to taste)

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente; drain and set aside.
  2. In a skillet, melt butter over medium heat. Add diced chicken thighs seasoned with salt and pepper; cook until browned and cooked through.
  3. In a saucepan, melt butter to create a roux with flour until golden brown. Gradually whisk in milk; stir until smooth before adding cheddar cheese until melted.
  4. Combine the pasta, cheese sauce, cooked chicken, and BBQ sauce in a large bowl; mix well.
  5. Transfer to a greased baking dish and top with breadcrumbs. Bake at 350°F (175°C) for about 20 minutes until bubbly and golden brown.
