  • 4 medium yellow onions, thinly sliced
  • 1 cup all-purpose flour
  • 6 tablespoons unsalted butter, cold and cubed
  • 2 tablespoons cold water
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 tablespoon fresh thyme or chives, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour and salt. Cut in cold butter until crumbly. Gradually add cold water until dough forms.
  3. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  4. In a skillet, melt butter over medium heat and add sliced onions. Cook until golden brown (about 20 minutes).
  5. In another bowl, beat cream cheese, eggs, herbs, salt, and pepper until smooth. Gently fold in caramelized onions.
  6. Roll out chilled dough into a circle and place it in a pie pan. Pour onion mixture evenly over the crust.
