  • 4 tbsp unsalted butter (melted)
  • 8 oz mascarpone cheese (room temperature)
  • 8 oz Philadelphia cream cheese (softened)
  • 3/4 cup granulated sugar
  • 1/2 cup brewed espresso or strong coffee (cooled)
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder (for dusting)
  • 1 cup heavy whipping cream (whipped)
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C). Combine crushed graham crackers and melted butter in a bowl; press firmly into the bottom of a springform pan. Bake for about 10 minutes until lightly golden.
  2. In another bowl, mix mascarpone and cream cheese until smooth. Add sugar, espresso, vanilla extract; blend well.
  3. Beat in eggs one at a time until just combined—avoid overmixing.
  4. Pour mixture over crust in the springform pan; smooth out with a spatula.
  5. Bake for 50-60 minutes until edges are set but center is slightly jiggly. Allow cooling at room temperature before refrigerating for at least four hours or overnight.
