  • 3 large eggs
  • 1 cup fresh raspberries

Instructions

  1. Preheat oven to 350°F (175°C). Line a springform pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press firmly into the bottom of the prepared pan.
  3. Toast pistachios on a baking sheet for 5-7 minutes; let cool and chop roughly.
  4. In a large bowl, beat room-temperature cream cheese until smooth. Gradually add sugar, mix in sour cream and vanilla extract.
  5. Add eggs one at a time, mixing gently until just blended.
  6. Fold half of the raspberries into the filling mixture, then pour over the crust.
  7. Bake for 45-50 minutes or until edges are set but center is slightly wobbly. Cool completely before refrigerating overnight.
