  • 1 ½ cups chocolate graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream (full-fat)
  • ¾ cup granulated sugar
  • 1 tsp pure peppermint extract
  • ¼ cup unsweetened cocoa powder
  • 1 cup heavy whipping cream, chilled
  • Chocolate shavings or chips for garnish

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix chocolate graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  2. Bake crust for 10 minutes; let cool completely.
  3. In another bowl, beat cream cheese until smooth. Add sour cream and sugar gradually, mixing continuously to avoid lumps.
  4. Stir in cocoa powder and peppermint extract until fully blended.
  5. Pour filling over the cooled crust and smooth the top. Bake for 50-60 minutes until set but slightly jiggly in the center.
  6. Cool at room temperature before refrigerating for at least four hours or overnight.
  7. Before serving, whip heavy cream to soft peaks and top the cheesecake with whipped cream and chocolate shavings.
