Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup creamy pesto sauce
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh basil leaves
  • ¼ cup grated Parmesan cheese
  • ½ cup heavy cream
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the salmon fillets dry with paper towels.
  2. Drizzle olive oil on both sides of the salmon and season with salt and pepper.
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the salmon skin-side down for about 4 minutes until golden brown.
  4. Flip the fillets, add creamy pesto sauce over each piece, and cook for another 3 minutes.
  5. Scatter halved cherry tomatoes around the salmon in the skillet.
  6. Transfer the skillet to the preheated oven and bake for about 10 minutes or until the salmon flakes easily with a fork.
