  • 8 oz fettuccine pasta
  • 3 tbsp gochujang
  • 1 cup full-fat coconut milk
  • 2 cloves garlic, minced
  • 1 cup bell peppers, sliced
  • 2 cups baby spinach
  • 1 cup protein of choice (chicken, shrimp, or tofu)
  • 1 tbsp soy sauce (low-sodium)
  • Juice of 1 lime
  • 1 tsp sesame oil

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add oil and sauté minced garlic until fragrant, about 1 minute.
  3. Add sliced bell peppers and your choice of protein; cook until tender (about 5-7 minutes).
  4. In a bowl, whisk together gochujang, soy sauce, coconut milk, lime juice, and sesame oil. Pour over sautéed ingredients in the skillet.
  5. Add cooked pasta and toss gently to coat every strand in the sauce.
  6. Stir in fresh baby spinach just before serving until wilted.
