  • 24 ladyfingers (savoiardi)
  • 1 cup full-fat coconut milk
  • 1 cup brewed espresso (cooled)
  • 1 cup mascarpone cheese
  • 1 cup coquito (homemade or store-bought)
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp granulated sugar (adjust to taste)
  • 1 tsp pure vanilla extract

Instructions

  1. Prepare your workspace by gathering all ingredients and tools.
  2. Brew your espresso and let it cool.
  3. In a large bowl, whisk together mascarpone cheese and coconut milk until smooth.
  4. Stir in coquito and vanilla extract; adjust sweetness if needed.
  5. Briefly dip each ladyfinger into the cooled espresso, then layer half in a baking dish.
  6. Spread half of the creamy filling over the ladyfingers. Repeat with another layer of dipped ladyfingers and remaining filling.
  7. Cover with plastic wrap and refrigerate for at least four hours or overnight.
  8. Before serving, dust with cocoa powder.
