  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • ½ cup mini chocolate chips
  • 1 cup all-purpose flour
  • ½ cup brown sugar, packed
  • 3 large eggs, room temperature
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom of a springform pan.
  2. Bake the crust for 8-10 minutes until golden. Let it cool.
  3. In a separate bowl, beat softened cream cheese until smooth. Add sour cream, granulated sugar, brown sugar, and vanilla; mix until well blended.
  4. Add eggs one at a time on low speed, mixing well after each addition. Gently fold in flour and mini chocolate chips.
  5. Pour the filling over the cooled crust and bake at 325°F (160°C) for 50-60 minutes until edges are set but the center is slightly jiggly.
  6. Allow to cool before refrigerating overnight for best flavor.
