  • 1 lb ground beef (lean)
  • 1/2 lb Italian sausage (spicy or sweet)
  • 1 cup fresh breadcrumbs
  • 1 large egg
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil (chopped)
  • 1/4 cup fresh parsley (chopped)
  • 28 oz canned whole peeled tomatoes
  • 4 cups low-sodium chicken broth
  • 1 cup carrots (diced)
  • 1 cup celery (diced)
  • 3 cloves garlic (minced)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, mix together ground beef, Italian sausage, breadcrumbs, egg, Parmesan cheese, chopped herbs, and minced garlic until just combined.
  2. Form the mixture into golf ball-sized meatballs and set aside.
  3. Heat olive oil in a large pot over medium heat. Sauté diced carrots and celery until softened, about 5 minutes.
  4. Add minced garlic and cook until golden brown. Stir in canned tomatoes with their juice, crushing them slightly.
  5. Pour in the chicken broth and bring to a gentle simmer; season with salt and pepper.
  6. Drop meatballs into the simmering broth. Cover partially and cook for about 15-20 minutes until meatballs are cooked through.
