- 1 cup fresh breadcrumbs
- 1 large egg
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup fresh basil (chopped)
- 1/4 cup fresh parsley (chopped)
- 28 oz canned whole peeled tomatoes
- 4 cups low-sodium chicken broth
- 1 cup carrots (diced)
- 1 cup celery (diced)
- 3 cloves garlic (minced)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large bowl, mix together ground beef, Italian sausage, breadcrumbs, egg, Parmesan cheese, chopped herbs, and minced garlic until just combined.
- Form the mixture into golf ball-sized meatballs and set aside.
- Heat olive oil in a large pot over medium heat. Sauté diced carrots and celery until softened, about 5 minutes.
- Add minced garlic and cook until golden brown. Stir in canned tomatoes with their juice, crushing them slightly.
- Pour in the chicken broth and bring to a gentle simmer; season with salt and pepper.
- Drop meatballs into the simmering broth. Cover partially and cook for about 15-20 minutes until meatballs are cooked through.
