  • 1 cup dried pinto beans
  • 4 slices thick-cut bacon
  • 1 medium sweet yellow onion, chopped
  • 2 cloves fresh garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 cup barbecue sauce
  • 2 tsp chili powder
  • 1 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Soak the dried pinto beans overnight in water.
  2. In a large pot over medium heat, cook the bacon until crispy. Reserve some grease.
  3. Sauté the onions and bell pepper in the bacon grease until softened.
  4. Add minced garlic and chili powder; cook until fragrant.
  5. Drain the beans and add them along with barbecue sauce, brown sugar, salt, and pepper.
  6. Pour in enough water to cover by an inch. Bring to a boil, then simmer on low for about two hours until tender.
