Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde (fresh or jarred)
  • 8 slices pepper jack cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1 lime

Instructions

  1. Rinse chicken breasts under cold water and pat dry with paper towels.
  2. In a bowl, combine olive oil, salt, pepper, and lime juice. Coat each chicken breast in the marinade and let sit for at least 30 minutes.
  3. Preheat grill to medium-high heat. Grill chicken breasts for about 5-6 minutes per side until fully cooked (internal temperature of 165°F).
  4. After flipping the chicken, generously spoon salsa verde on top and add pepper jack cheese slices. Close the grill lid until cheese is melted (about 1-2 minutes).
  5. Remove from grill, let rest briefly, slice, and serve hot with your favorite sides.
