  • 1 cup quinoa
  • 1 can (15 oz) black beans, drained
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tsp taco seasoning
  • Salt to taste
  • 1/2 cup shredded cheese (optional, cheddar or queso fresco)

Instructions

  1. Rinse quinoa under cold water until clear. Cook with 2 cups water according to package instructions (about 15 minutes).
  2. In a skillet over medium heat, add 2 tsp olive oil. Sauté bell peppers and onions until translucent (about 5 minutes).
  3. Add drained black beans and taco seasoning; stir for another couple of minutes until heated through.
  4. Mix in cherry tomatoes and cilantro just before serving.
  5. In bowls, layer cooked quinoa first, followed by the sautéed vegetables, black beans, diced avocado, and a squeeze of lime juice. Top with cheese if desired.
