In just under 30 minutes, you can whip up a comforting stir fry that delights the taste buds and uses up any leftover veggies in your fridge.


Ingredients

  • 12 oz frozen potstickers (chicken or veggie)
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, julienned
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil

Instructions

  1. Chop all vegetables into bite-sized pieces.
  2. Heat a splash of oil in a large skillet over medium heat. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
  3. Add bell peppers, broccoli, and carrots to the skillet. Sauté until tender-crisp (3-5 minutes).
  4. Add frozen potstickers to the pan; cook undisturbed until golden brown on one side (4-5 minutes), then flip.
  5. Drizzle soy sauce over the potstickers and vegetables; let simmer for another 3-4 minutes.
  6. Remove from heat and drizzle with sesame oil before serving.
