  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 2 tablespoons Cajun seasoning
  • 2 large sweet potatoes (about 1.5 lbs), peeled and cubed
  • 1 tablespoon olive oil (plus more for cooking)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, diced
  • Fresh cilantro or parsley, chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Toss sweet potato cubes in olive oil, salt, and pepper; spread on a baking sheet.
  2. Roast sweet potatoes for 25-30 minutes until tender.
  3. In a skillet over medium-high heat, add olive oil. Season chicken with Cajun seasoning and cook for 6-7 minutes per side until golden brown and cooked through (165°F internal temperature). Let rest before slicing.
  4. In the same skillet, sauté diced bell peppers and onion until softened (about 5 minutes).
  5. Assemble bowls with roasted sweet potatoes as the base, sliced chicken on top, followed by sautéed veggies. Garnish with cilantro or parsley if desired.
