  • 1 cup chopped nuts (walnuts or pecans)
  • 1 cup all-purpose flour
  • 1 cup light brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp ground ginger
  • 2 large eggs
  • 1/2 cup unsalted butter (softened)
  • 1 tsp baking powder
  • Zest of 1 orange or lemon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a bowl, mix dried fruits and nuts together. Set aside.
  3. In another bowl, cream softened butter and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk flour, baking powder, and spices. Gradually fold into the wet mixture until just combined.
  5. Stir in fruit-nut mix and zest until evenly distributed.
  6. Pour batter into the prepared pan and smooth the top. Bake for 30–35 minutes or until golden brown and a toothpick comes out clean.
  7. Cool completely before cutting into squares.
