- In a separate bowl, whisk flour, baking powder, and spices. Gradually fold into the wet mixture until just combined.
- Stir in fruit-nut mix and zest until evenly distributed.
- Pour batter into the prepared pan and smooth the top. Bake for 30–35 minutes or until golden brown and a toothpick comes out clean.
