- 4 medium Yukon Gold potatoes, diced

- 1 cup red wine (optional)
- 2 tsp dried thyme
- 2 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Brown the beef cubes until caramelized on all sides.
- Add onions and garlic; sauté until onions are translucent (about 5 minutes).
- Stir in carrots and potatoes; cook for another 3-4 minutes.
- Pour in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the pot.
- Add thyme, oregano, salt, and pepper. Bring to a gentle boil before reducing heat.
- Cover partially and simmer on low for 1.5 to 2 hours until meat is tender.
- Adjust seasoning as needed before serving warm.
