  • 2 lbs beef chuck roast, cut into cubes
  • 3 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup red wine (optional)
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the beef cubes until caramelized on all sides.
  2. Add onions and garlic; sauté until onions are translucent (about 5 minutes).
  3. Stir in carrots and potatoes; cook for another 3-4 minutes.
  4. Pour in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the pot.
  5. Add thyme, oregano, salt, and pepper. Bring to a gentle boil before reducing heat.
  6. Cover partially and simmer on low for 1.5 to 2 hours until meat is tender.
  7. Adjust seasoning as needed before serving warm.
