Ingredients
- 2 cups all-purpose flour
- 2 large eggs
- 1 cup whole milk ricotta cheese
- 1/2 cup grated fresh Parmesan cheese
- 2 tbsp chopped fresh basil
- 2 tbsp chopped fresh parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp extra virgin olive oil (for drizzling)
Instructions
- In a bowl, combine flour and salt. Create a well in the center and crack in the eggs. Mix until a shaggy dough forms, then knead until smooth (about 5 minutes).
- Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.
- In another bowl, mix ricotta, Parmesan, herbs, salt, and pepper until well combined.
- Roll out the rested dough on a floured surface to about 1/16 inch thick. Cut into squares.
- Place small mounds of filling onto one half of each square. Brush edges with water, fold over, and seal tightly.
- Boil salted water and add ravioli. Cook until they float (about 3-5 minutes). Serve drizzled with olive oil.
