  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) mild green chiles
  • 4 cups chicken broth
  • 8 oz cream cheese
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Juice of 1 lime
  • Fresh cilantro (optional, for garnish)

Instructions

  1. In a large pot over medium heat, sauté the diced onion in a bit of oil until translucent. Add minced garlic and cook for another minute.
  2. Add the chicken breasts to the pot along with salt, pepper, cumin, and chili powder. Cook for about 5 minutes until slightly browned.
  3. Pour in the chicken broth to cover the chicken completely. Bring to a simmer and cook for about 20 minutes or until chicken is cooked through.
  4. Remove the chicken from the pot and shred it using two forks. Return shredded chicken back to the pot.
  5. Stir in the white beans, green chiles, and cream cheese until well combined and creamy.
  6. Squeeze fresh lime juice into the chili before serving; garnish with cilantro if desired.
