- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) mild green chiles
- 4 cups chicken broth
- 8 oz cream cheese
- 2 tsp ground cumin
- 2 tsp chili powder
- 1 medium onion, diced
- 3 cloves garlic, minced
- Juice of 1 lime
- Fresh cilantro (optional, for garnish)
Instructions
- In a large pot over medium heat, sauté the diced onion in a bit of oil until translucent. Add minced garlic and cook for another minute.
- Add the chicken breasts to the pot along with salt, pepper, cumin, and chili powder. Cook for about 5 minutes until slightly browned.
- Pour in the chicken broth to cover the chicken completely. Bring to a simmer and cook for about 20 minutes or until chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return shredded chicken back to the pot.
- Stir in the white beans, green chiles, and cream cheese until well combined and creamy.
- Squeeze fresh lime juice into the chili before serving; garnish with cilantro if desired.
