  • 1 lb fresh salmon fillets
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/4 cup finely chopped green onions
  • 2 tablespoons fresh dill weed
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat oven to 375°F (190°C). Bake the salmon fillets for 15-20 minutes until flaky. Let cool, then flake into small pieces.
  2. In a large bowl, mix flaked salmon with breadcrumbs, eggs, green onions, dill weed, salt, and pepper until combined.
  3. Shape the mixture into round patties about 2 inches wide.
  4. In a skillet over medium heat, add enough oil to cover the bottom of the pan. Heat until shimmering.
  5. Fry the patties for 3-4 minutes on each side until golden brown and crispy. Drain on paper towels before serving.
