  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 8 oz elbow macaroni (or pasta of choice)
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream (for serving)

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked; drain excess grease.
  2. Stir in chopped onion, minced garlic, and taco seasoning for about 3-4 minutes until fragrant.
  3. Transfer the beef mixture to a crockpot. Add diced tomatoes and uncooked pasta; stir well.
  4. Pour in enough water or broth to cover the pasta by an inch; mix thoroughly.
  5. Cook on low for 4-6 hours or high for 2-3 hours until pasta is tender.
  6. In the last 15 minutes, sprinkle shredded cheddar on top and cover until melted.
