- 3–4 boneless, skinless chicken breasts
- 8 oz fusilli or penne pasta
- 8 oz fresh mozzarella cheese
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
Instructions
- Cook pasta in salted boiling water until al dente according to package instructions. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper; cook for 6-7 minutes per side until golden brown and fully cooked through. Remove from skillet and let rest.
- In the same skillet, sauté minced garlic until fragrant (about 1 minute). Pour in heavy cream and stir in grated Parmesan until melted and smooth.
- Cube the cooked chicken and return it to the skillet along with the drained pasta. Tear fresh mozzarella into pieces and add on top; cover with a lid for 3 minutes until melted.
