  • 34 boneless, skinless chicken breasts
  • 8 oz fusilli or penne pasta
  • 8 oz fresh mozzarella cheese
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook pasta in salted boiling water until al dente according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper; cook for 6-7 minutes per side until golden brown and fully cooked through. Remove from skillet and let rest.
  3. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Pour in heavy cream and stir in grated Parmesan until melted and smooth.
  4. Cube the cooked chicken and return it to the skillet along with the drained pasta. Tear fresh mozzarella into pieces and add on top; cover with a lid for 3 minutes until melted.
